Winemaking
The Malagouzia grapes are sourced from a 1 hectare vineyard - harvested mid-August. The wine is produced by a local traditional method - approximately 40% of the desired final quantity of wine is boiled with Malagouzia grape must. Then successive doses of the live fermenting grape must are added carefully, so as not to stop fermentation. Locals call this type of wine 'vrasto' which means 'boiled'.
Tasting Note
Aromas of candied citrus peel, honey and dried fruit with plenty of ripe and roasted pineapple. The palate is luscious and intense with layers of mandarain, honey, citrus and more ripe pineapple - yet still with remarkable freshness and lift.Food Match
Fantastic with fruit based desserts such as pineapple tatin or elegant creamy puddings.
