Winemaking
The white chalky soil of the Jerez area, 'albariza,' is ideal for the cultivation of Palomino grapes which produce the sherry for which Jerez is so well known. With a focus on the old vine vineyards of Mirafloes La Baja, Sanlúcar from which their Florpower wines come from. However, experience has shown them that, in the end, the vineyard always prevails regardless of the intensity and duration of ageing, which is why they increasingly tend to limit the latter more and more.
Tasting Note
This latest saca of Manzanilla Pasada from the notable cellars of Hijos de Rainera Pérez Marín, Sanlúcar de Barrameda is the result of combining the “Bota Punta” together with two other outstanding casks of the 1/15 solera, from which all the editions of Manzanilla “Bota Punta” and “Bota NO” has come since the first, La Bota 20 right through to the most recent and highly acclaimed La Bota 100 (97 WA). A very special wine that shows a particular complexity due to an astonishing balance of finesse, chalky minerality, and roasted dry fruit nuances due to the start of the process of amontillamiento. The average age of this wine is around 14 years. Stunningly versatile on the dinner table, it matches a wide variety of dishes.Food Match
