Winemaking
The must undergoes a two-day pre-fermentation cold maceration. After this soak, the vat temperature is gradually increased to initiate alcoholic fermentation, which takes place during an extended maceration. Once fermentation is complete, the wine remains on its lees for eight months to build depth and texture. It is then transferred to French oak barrels for a further 12 months of ageing, followed by six months in bottle to refine its complexity and elegance.
Tasting Note
This deep garnet-coloured wine presents a rich and complex bouquet of red berries such as raspberry, blackberry, and cherry, layered with intriguing spice notes of olives, tomatoes, and vanilla. Full-bodied and aromatic, it offers a robust tannic structure balanced by a complex, lingering finish. Best served slightly cool between 16–18°C, it delivers a refined and memorable tasting experience.Food Match
