Winemaking
Designed from the outset so that the elegance and balance of the wine would be maintained after the de-alcoholisation process; the Chardonnay grapes are specifically selected for their vibrancy and freshness. Part aged in oak and part in steel, the wine is then spends time on the fine lees for an extended time with periodic punching down. After the gentle vacuum distillation process, the now de-alcoholised wine is carbonated to create a sparkling cuvée that is elegant, expressive and characterful.

Aromatic, ripe yellow apples, rounded and floral with bright, lively acidity.Food Match
Perfect as an aperitif, it also pairs beautifully with green asparagus, scallop or sea bass carpaccio, roasted turbot, langoustine ravioli with lemon cream and black truffle, all types of poultry, and finally, pastries and macarons.
